“My approach to crafting cuisine is interdisciplinary, informed by history, culture, and where I’ve traveled. Beyond being just ingredient- or technique-driven, I want to understand the story behind the cuisine. It comes from a place of wonder, fascination, and constant curiosity. What I create is also a product of my training, which is based on the traditional European model of French regional cuisine. But that’s balanced by a newer dynamic that gives chefs the ability to express themselves more freely.”

A Space Built for Culinary Journeys

As soon as you walk into The Foundry, you’re immersed—sensing the energy of our chefs, taking in the delicious aromas wafting throughout our space, and feeling soigné, the French term for “taken care of.”

Our huge double oven and cooking suite is the focal point. The best cuisine is equal parts flavor and art, and this is our stage. It brings together the meticulous preparation that takes place in the back of the house—sauté, pasta making, pastry, and more—with the work we do to bring our creations to our guests.

Hours

Lunch:
Wednesday-Friday, 11:30 a.m.-1:30 p.m.
(not to open until later)

Dinner Service:
Wednesday-Saturday, 5-9 p.m.

Happy Hour:
Tuesday and Friday, 4-7 p.m.
